Shikrán Anchovy Caviar Pearls, 340 g Catering Jar

Most people who say they dislike anchovies dislike the fillet, not the flavour. The oily strip, the bones, the way it takes over whatever it lands on. Take the same Cantabrian anchovy, concentrate it, and set it into a pearl, and the objection disappears.

This is the catering format — roughly 8,500 pearls, sized for restaurant service, events and anyone who has already worked through the 100 g. Spherified in Spain by Eurocaviar, who have been making this product since 1984.

Where it earns its place

• Pizza & pasta – scatter over a finished pizza, or fold through puttanesca off the heat
• Eggs & potatoes – deviled eggs, soft-boiled eggs, potato salad, crushed new potatoes
• Tapas & canapés – tomato bread, burrata, oysters, blinis, one-bite canapés at volume
• Dressings & drinks – Caesar dressing, steak tartare, vinaigrettes, the rim of a Bloody Mary

Season it, don't just decorate it

This is a seasoning that happens to look like caviar. At 7.9 g salt per 100 g it carries real salinity, so it replaces the anchovy and some of the salt in a dish rather than sitting on top as decoration. Start with less than you think and taste as you go.

You can cook with it

The pearls hold their shape, colour and flavour when heated. Add them at the end — after the pizza leaves the oven, or once the pasta is off the heat.

Allergens

FISH, CRUSTACEANS and MOLLUSCS. Contains anchovy and cod liver oil. Not suitable for anyone with a fish or shellfish allergy. Contains carmine (E120) and monosodium glutamate (E621), so this product is not vegetarian or vegan.

Storage

Keeps 24 months unopened, stored cool and dry away from direct sunlight. Once opened, refrigerate between 2 °C and 12 °C and consume within 10 days. Do not freeze.
